Lentil Bruschetta Dip
This week, I am doing a 7-day sugar detox and I wanted to add this recipe to my blog because it is a great one I will add to the meal rotation this week. I used to make it all the time for small dinner parties or when I used to throw events. Now, I make it at the beginning of some weeks and have it ready to go for lunch or an easy snack. It is a really filling, nourishing and satisfying with crackers, pita bread or if you want it to be really clean, cucumber or radish slices. On top of that, it is super easy to make! I buy everything from Trader Joe’s, but you could use similar ingredients from another store.
Ingredients:
Cooked Lentils (I use the vaccum sealed ones in the refridgerated section at the Trader Joes)
Pre-made Bruschetta (I love the one in the tub, also refridgerated section at TJ’s)
Feta Cheese crumbled
Thats it! Mix all of these ingredients and store in an air tight container. You can eat it all throughout the week for lunch or a snack. Enjoy!
