GF Avocado Brownie Cookies

I made these cookies after seeing a couple of different recipes floating around the internet... I altered them to my liking.  They are very healthy, no gluten, dairy or refined sugar and they are actually very decadent and tasty.  Im not saying this is the best brownie I have ever had but it is all real food and it is a very healthy treat that satisfies the chocolate craving so I give them a HUGE thumbs up!  Tell me if you make them and like them...

Gluten-Free Avocado Brownie Cookies

Wet Ingredients:

  • Avocado
  • 1/2 Cup Maple Syrup (room temp or heated slightly so as not to make the coconut oil harden)
  • 4 Tbsp Coconut oil

Dry Ingredients:

  • 1/4 Cup Teff Flour
  • 1/4 Cup Raw Almond Flour (you could do coconut flour or all almond flour and skip the teff if you want!)
  • 1/2 Cup Cocoa Powder
  • Pinch or two of Salt
  • 3 Tsp Baking Soda
  • 1/4 Cup Cocao Nibs
  • Extra Salt

Mix the wet ingredients together with a whisk or in a stand mixer to fully combine and mix it until creamy.  Set aside.  Mix the dry ingredients (wait to add the nibs) and then add the wet into the dry.  Mix until incorporated, add the cocao nibs and combine.  Set inside the refrigerator for 30 minutes.

While you are waiting, set the oven to 350.  After the dough has been chilled, use a small ice cream scoop to spoon small rounds onto the baking sheet.  Flatten with your fingers and top with thick salt.  They dough won't spread or move so you can out them close together.

Bake at 350 for 10 minutes or until the cookies look slightly cracked but they ares till gooey.

Take them out and let them rest for 5 minutes and then you may proceed to devour guilt free....
