Cauliflower Potato Soup

Growing up in California, chilly nights were few and far between. It is a rare occasion that you are just craving the comfort of a warm bowl of soup or chili. Ever since moving to Seattle however, there is almost nothing I love better than stopping in at a local cafe and ordering their soup of the day (makes me think of that scene from the film “Dumb and Dumber” where he asks “What is the soup de Jour?” and the waitress says “Its the soup of the day” and he says that sounds good.). I have been craving soup a lot more lately and I have a few go-to’s that I cant wait to share with you!

This potato soup is creamy, velvety and tasty and you can garnish it with so many toppings, or be completely satisfied with the soup on its own.

Here is the recipe:

  • 4 Large Yukon Potatoes //Diced into small pieces

  • 1 Head Cauliflower //Trimmed into small pieces

  • 2 Cups Milk

  • 2 1/2 Cups Vegatable Broth

  • 1 Onion //Chopped

  • 3 Cloves Garlic //Chopped

  • A few Sprigs Fresh Thyme

  • 2 Tbsp Butter

  • Salt + Pepper to Taste

Here are the steps to the recipe:

1. Go ahead and start trimming and chopping your veggies and place them all in a large soup pot or dutch oven. I love these dutch ovens from Le Creuset and I use them for everything!

2. You will put all the chopped vegetables, milk, broth and sprigs of thyme and salt and pepper (So every ingredient!) in the pot without the lid and then turn the heat on medium and let it simmer until the potatoes and cauliflower are nice and soft. This usually takes my stove about 40 minutes.

3. Once the veggies are nice and soft, take out the sprigs of thyme (Hopefully all the fresh thyme has fallen off the sprig).

4. Put the contents of the pot into a blender one half at a time until all of the ingredients are blended together and super smooth. Add salt and pepper until you like the way it tastes! We got a Vitamix as a wedding gift and I have loved using it for the past 3 years.

5. Put everything back in the pot on the stove and heat on low until you are ready to serve. This soup reheats so well, and can even be frozen if you want to make it and save it for another time!

Great Garnishes?

  • Pomegranate seeds

  • Croutons

  • Chives or Scallions

  • Extra Pepper

  • Nuts like slivered almonds for some crunch

  • Bread for dipping!
