Winter Salad 1
Winter salads, I just love them. I feel like the fruit and veg just know what time of year it is.... those cranberries, how they seem to be the perfect shade of red and those pomegranate seeds just seem to make the food sparkle!! I'm dead serious right now. Speaking of colors, I am obsessed with green this year. Kale, of all the leafy greens, you're my favorite hue.
I came up with this salad several weeks ago and it has been a hit at every party, with lots of people asking for the recipe. I am really excited for you to bring it to this months work party or the one you are hosting. I also have another one coming, it is inspired from one of my favorite cookbooks from this year! Salad:
1-2 big heads of kale (or about 4 cups of kale)
1 Cup of pomegranate seeds
1 Cup Trader Joe's pumpkin spiced pumpkin seeds
1/4 Cup green onions (scallions)
2 Pears chopped
Dressing:
1 shallot minced
1/4 Cup olive oil
1 Tbsp maple syrup
2 Tbsp red wine vinegar
2 Tbsp pomegranate vinegar
Pinch of S + P
To make the salad, wash and massage the kale in the serving bowl. Combine the ingredients for the dressing in a blender and pulse a few times; it can be a little chunky but should look creamy. Top with all the ingredients and toss with the dressing. Or prep the salad and save the dressing to serve later! The ingredients hold up really well once tossed too so it won't get too soggy throughout the night. This is such a fun party salad because it is not only delicious, it is really beautiful too.
